Ingredients
- 1 1/2 tbsp. olive oil
- 1 tbsp. red wine vinegar
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 4 C baby spinach (about 4 oz)
- 1 pear (such as Bosc), peeled, cored, halved lengthwise, and thinly sliced
- 1/2 C dried cranberries
- 1/4 C walnut pieces, toasted
- 1/4 C thinly sliced red onion
Directions
- WHISK oil, vinegar, salt, and pepper in large bowl. Add spinach, pear, cranberries, walnuts, and onion and toss. Season to taste with salt and pepper.
