Ingredients
- 1/2 c.
blanched slivered almonds
- 1 c.
dried apricots
- 2 tbsp.
unsweetened shredded coconut
- 1 tbsp.
white chia seeds
- 1 tbsp.
honey
- 1/2 tsp.
pure vanilla extract
- 1/8 tsp.
ground cardamom
- 1/8 tsp.
kosher salt
shredded coconut, for serving
Directions
- Step 1In food processor, pulse slivered almonds to chop. Add dried apricots, shredded coconut, chia seeds, honey, vanilla extract, ground cardamom, and kosher salt, then process to finely chop.
- Step 2Shape mixture into 1-in. balls (about 1 heaping tbsp. each). If desired, roll in shredded coconut. Refrigerate in airtight container up to 1 week.
